I’ve written about Kodiak Cakes before, but now they have these Minute Muffins. All you have to do is add water, microwave for a minute, and you have yourself a muffin. I like to pump mine up with whisking in an egg for an adding punch of protein and top with fruit.

I’ve made my own dessert hummus before, but guys this Delighted by Dessert Hummus is by far creamier than what I’ve ever made. I loved the sweet snickerdoodle flavor. I’ve been dunking strawberries in this dessert hummus on repeat for my evening snack lately.

I was intrigued by Puroast Coffee. They sent me a sample of their low acidic coffee to try. I usually add a little splash of milk to my coffee in the morning, but this was the first time I could actually drink it completely black. It is very smooth and much less bitter. Puroast has 70 percent less acidity than any other coffee. My day doesn’t start without a cup of coffee.

Simple Mills, I don’t think you make a product I don’t like. I wish I could cook and bake everything from scratch, but let’s be real, I’m busy! I have no shame in my box mix game, especially when it’s packed with simple and wholesome ingredients. Simple and delicious!

I originally posted this recipe back in 2014 on my travels to Blog Brulee in Vermont. Boy, a lot has changed since that conference. That conference hands down was the most amazing experience and I contribute a lot of my blogging success from that conference. It gave me the confidence to turn my hobby into my business.
One of my biggest goals was to focus on my food photography. When you are sharing a recipe online, it has to look visually appealing. While some of my old recipes taste delicious, they are not very photogenic. I am working on updating old recipes this summer. This is one of my favorite energy bite recipes, but the photo definitely needed an upgrade.
Then vs. Now - Improving Food PhotographyEvery time I take food pictures, I am constantly learning and improving. It is a constant learning process.

If you are a coffee lover, you’ll love the addition of the espresso powder. It will give you that little jolt to power you through the afternoon. Find espresso powder in the coffee aisle of the grocery store.
Make these ahead and enjoy all week (if they even last that long). Just remember to store in the refrigerator, or they dry out and get very crumbly.

Vanilla Espresso Energy Bites

  • Yield: 16 balls 1x

Ingredients

Scale
  • 1½ cup rolled oats
  • ¾ cup ground flax seed
  • ½ cup chocolate chips
  • 1 cup vanilla almond butter (I used Justin’s)
  • 2 tbsp pure maple syrup
  • 1 tablespoon espresso powder

Instructions

  1. Add oats, flax seed, and chocolate chips in a large bowl. Toss to combine.
  2. Add almond butter, maple syrup, and espresso in a small bowl and microwave for 30 seconds or until softened.
  3. Combine the almond butter mixture with the oat mixture until combined. The mixture will be thick. Shape into tablespoon-sized balls. Store in refrigerator.

I’m from New Jersey and in NJ people feel very strongly about their coffee. Dunkin vs. Starbucks. When I say people feel very strongly about their coffee, they will openly tell you why they like their choice and how you should too.

Dunkin or Starbucks?

I don’t often get coffee out, as I prefer to make it at home, but when I want to grab a quick cup of coffee I’ll stop at Dunkin. For more of the specialty drinks, like lattes, I prefer Starbucks, so you could say I’m the rare NJ coffee drinker. I don’t pick sides.

I’m the type of morning person where coffee must be present during my morning routine. I don’t want to have to wait until I’m already out the door to get my caffeine fix. Coffee beverages, like lattes, can be part of a healthy diet. An average latte contains one full serving of dairy.

Mocha Latte

Description

Cozy up to a delicious mocha latte that you can make right at home!


Ingredients

Scale
  • 1 teaspoon instant espresso powder
  • 2 tablespoons hot water
  • 8 ounces low-fat milk
  • 1 packet CocoaVia® unsweetened dark chocolate packet
  • (optional) 1/4 teaspoon coconut sugar (or sweetener of your choice)

Instructions

  1. Prepare instant espresso by stirring instant espresso powder with hot water in a coffee mug.
  2. In a small pot over low-medium heat, warm the almond milk, just until tony bubbles begin to surface. Remove from heat and use an electric milk frother to create foam.
  3. Slowly pour the warmed milk over the prepared espresso using a large spoon to hold back the milk foam. Spoon as much foam as you desire on top.
  4. Stir in one CocoaVia® unsweetened dark chocolate packet and coconut sugar (if using).
  5. Serve immediately.

Notes

CocoaVia® cannot be baked or heated, as the process will destroy the cocoa flavanols; It can be poured into hot milk or other liquid
