This is the first-ever Grocery Store Finds post, where I haven’t actually tried the products yet myself. Last month was Expo East and was hoping to get there, but my schedule was already booked with cooking classes and other events. I vicariously was following the #expoeast on Instagram and seeing all these new products that were announced and soon to hit the shelves if they haven’t already.

Maybe it’s the dietitian in me, but when I see a new product, I am intrigued. Some of these brands you probably have heard of before, but they are expanding their product lines with new items.

Vegan mayo? How is that even possible. Right on the jar, it says that it is made with avocado oil, but that is liquid. I did a little research and found out how they make a spreadable consistency. The magic is aquafaba! Aquafaba is the liquid leftover from soaking or cooking garbanzo beans. The water absorbs proteins and starches from the beans, becoming more viscous along the way. Its viscosity is similar to that of eggs and egg whites, making aquafaba the perfect egg substitute. Chosen Foods blends aquafaba with avocado oil, to create a 100% vegan mayo that can truly be described as plant-based. Use this mayo as you normally would – on sandwiches, wraps, or as a base for sauces and dressings.

A protein muffin made in 60 seconds – I’m intrigued! I was very excited to see sorghum listed at the first ingredient. Sorghum is, a cereal grain native to Asia and Africa, that is naturally gluten-free, packed with protein and fiber, and full of antioxidants like policosanols. They use pumpkin seed protein to add extra protein for a quick and filling breakfast or snack.

I don’t know about you, but have you ever tried spiralizing a beet? It looks like a murder scene on my cutting board. Take a short cut and utilize these conveniently prepped veggies.

I always pack my lunch for the next day the night before. If not, I’m typically running out the door and a Siggi’s yogurt, KIND bar, and a piece of fruit are just tossed in my bag on my way out. I don’t mind those “snacky” kind of lunches once in a while, but I’d prefer more of a meal kind of lunch.

Plant-Based Proteins:

This chickpea walnut sandwich is a plant-based tuna/chicken salad makeover. I always try and make sure protein is present at lunchtime to help keep me full through the afternoon. Chickpeas are the perfect pulse for this recipe because the firm texture holds its shape. The addition of the walnuts is key for the crunch factor, while also providing heart-healthy fats.

Greek yogurt is a great substitute for mayonnaise to trim back on saturated fat and replace it with a boost of protein and calcium instead.

Add to a sandwich, top on a salad, or dip with crackers – this chickpea walnut mixture is versatile to get you out of your lunchtime rut.

Chickpea Walnut Sandwich

Ingredients

  • 1 (15-ounce) can chickpeas, drained and rinsed
  • ⅓ cup chopped walnuts
  • 3 tablespoons plain Greek yogurt
  • ½ teaspoon Dijon mustard
  • 1 tablespoon honey
  • 2 tablespoons scallions, thinly sliced
  • salt and pepper to taste
  • 4 slices whole wheat bread, toasted
  • (Optional) Toppings: lettuce, tomato, onion

Instructions

  1. Add chickpeas to a bowl and lightly mash with a fork. (Not too much. We aren’t making hummus!) Add walnuts, Greek yogurt, Dijon mustard, honey, and scallions and mix together. Season with salt and pepper, to taste.
  2. Add a desired amount of the chickpea mixture to the bread and add desired toppings. Top with the other slice of bread.

I had many summer jobs during high school and in between college semesters. One of them was at an outdoor catering business. We did a lot of BBQ’s and graduation parties, which served the classic outdoor fair, including burgers, hot dogs, barbeque chicken, and ribs. Plus, the typical sides like, potato salad, pasta, salad, and coleslaw.

Making the sides was one of the tasks I simply dreaded. With catering, every recipe is made in mass quantities to serve a crowd.
Do you have a certain food or ingredient that just skeeves you out? For me it’s mayonnaise. For a large party, I would have to make potato salad in these large buckets and wear these giant gloves to toss the mayonnaise in.

I used Banza pasta for this recipe. I feel like there are never enough plant-based protein options available at barbeques. This is a great way to have a protein-packed option for those who don’t eat meat and want to enjoy this as more of a meal than a side dish.

Ingredients

  • 8 ounces box rotini Banza pasta (or pasta of your choice)
  • 1-pint cherry tomatoes halved
  • 1 seedless cucumber, peeled and quartered
  • 1 (15 oz.) can chickpeas, drained and rinsed
  • 1/2 cup pitted Kalamata olives
  • 3 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • 2 cloves garlic, minced
  • 2 teaspoons dried oregano
  • salt, to taste
  • 1/2 cup feta cheese

Instructions

  1. Cook pasta according to package directions. Rinse with cold water to stop the cooking process.
  2. In a large bowl combine, pasta, tomatoes, cucumbers, chickpeas, and olives.
  3. In a small bowl, whisk together olive oil, red wine vinegar, garlic, and oregano. Season with salt to taste.
  4. Drizzle dressing over pasta salad and toss to combine. Gently fold in feta cheese just before serving.

GT came out with a new flavor this winter – Pure Love. It contains blood orange, hibiscus, and rose. It has a definite floral taste. I was a little taken aback at first, but then the flavor grew on me. I love adding a new flavor to my kombucha rotation.

For quite a while acai was known as THE superfood. While all fruits and vegetables contain phytonutrients that have superfood elements, acai was touted for its high amounts of antioxidants that can help build up your immune system and protect your cells against damage from free radicals. Fresh acai berries are not regularly available in grocery stores. I found these frozen packs and have been adding them to my smoothies. It turns a deep dark purple shade.

The Good Bean just came out with a new line with fava beans and peas. The original line with chickpeas is still growing with new flavors. I was excited when they reached out to me to see if I wanted to try their new line – of course, my answer was yes! One serving contains 7 grams of plant proteins and 3 grams of fiber. To make their crispy favas and green peas, they soak them raw, then quickly crisp them with a spritz of coconut oil to retain the crunch. They are vegan-friendly, gluten-free, non-GMO, high protein, high fiber, and low fat. I’m slightly obsessed with the balsamic herb flavor. I’ve been adding them on top of my salads for a crunch.

I never thought to add coffee to my overnight oats. This is genius! The little extra pick me up, plus the mocha flavor is a perfect way to start the day. The original recipe calls for the addition of coffee and chocolate protein powder, but I only had vanilla protein powder, so I added that plus a little cocoa powder to get that same mocha flavor.

Instructions

  1. In a mason jar or container, add all ingredients; stir well until combined.
  2. Cover an refrigerate overnight.
  3. In the morning, before serving, top with raspberries and chocolate raspberry granola. Enjoy!

Craving a crunchy snack? Try these homemade Crispy Garlic Chickpeas.

Ingredients

  • 2 (15-ounce) cans chickpeas, drained and rinsed
  • 1 tablespoon olive oil
  • 1 teaspoon lemon juice
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt

Instructions

  1. Preheat oven to 350 degrees F. Line a large baking sheet with parchment paper or spray with cooking spray.
  2. Dry chickpeas thoroughly. In a bowl, toss the chickpeas with olive oil and lemon to coat. Sprinkle with garlic powder and salt. Toss again.
  3. Transfer chickpeas in an even layer to the prepared baking sheet.
  4. Bake for 50 minutes to 1 hour, stirring occasionally, until crispy. Let cool for at least 1 hour, which will make the chickpeas crunchier as they cool.

Black Forest Chia Pudding

For breakfast, snack, or dessert, this Black Forest Chia Pudding will fill you up and satisfy your sweet tooth at the same time.https://julieharringtonrd.com/When I first tried kombucha, I didn’t understand how anyone could drink it, but now I LOVE it. Same goes for chia pudding. The first time I tried it, I hated the texture, but now it is something I really enjoy.

It’s funny how your taste buds change and adapt over time. This is why I when I teach kids classes, I encourage them to try a new food at least 5 times in 5 different ways. According to Ellyn Satter Institute, unfamiliar foods may have to be presented 15 or 20+ times. This goes for picky eater adults too!

Tip: If you don’t enjoy the texture of chia pudding, whip it in a food processor or blender and it becomes a fluffy mousse consistency.

Black Forest Chia Pudding

Ingredients

  • 1/3 cup chia seeds
  • 2 tablespoons raw cacao powder (or unsweetened cocoa powder)
  • 1 1/4 cups unsweetened non-dairy milk
  • 1 tablespoon maple syrup
  • 1/2 cup frozen dark cherries, thawed
  • 1/2 cup plain yogurt
  • 1 tablespoon cocoa nibs

Instructions

  1. In a small bowl, whisk together chia seeds, cacao powder, almond milk, and maple syrup. Divide into two containers. Store in the refrigerator overnight for the mixture to thicken.
  2. Top chia pudding with 1/4 cup yogurt, 1/4 cup cherries, and half tablespoon cocoa nibs in each container.

Black Forest Smoothie Bowl via RDelicious Kitchen @rdkitchenI never used to be a fan of protein powders, because majority of them have a lot of weird sounding ingredients and additives in them and even have a weird after taste, but now there are more options out there from real food ingredients. I always promote real food first, but sometimes protein powders can be a great supplement to the meal. Key word = supplement. Protein powders alone shouldn’t replace a full meal. Take this smoothie bowl for example, it contains three food groups with a balanced mixture of carbs, fats, and proteins, coming from it’s wholesome ingredients – fruit, almond milk, yogurt, almond butter, and chia seeds. The protein powder is supplementing the meal to add that extra little boost of protein.
img_1742I was intrigued about Kura with it’s grass-fed dairy protein and probiotic blend. Again, the protein powder is meant to supplement the meal with adding an additional 14g of New Zealand grass-fed dairy protein, which is proven to have higher levels of omega-3s than grain-fed dairy protein. Ingredients

  • 1/2 cup frozen cherries
  • 1/2 banana
  • 1/2 cup unsweetened almond milk
  • 1/4 cup Siggi’s black cherry yogurt (or plain/vanilla yogurt)
  • 1 tablespoon chia seeds
  • 1 tablespoon cocoa powder
  • 1 scoop chocolate protein powder (I used Kura)
  • 1 tablespoon almond butter
  • 1 cup ice
  • (optional toppings) cherries, banana slices, chia seeds, cocoa nibs, almonds, etc.

Instructions

  1. Simply place all ingredients into a blender. Blend until smooth and creamy.
  2. Pour in a bowl and top with desired toppings.

If you haven’t noticed, KIND came out with these new breakfast bars. These new bars (the raspberry chia flavor in particular) contain 5 whole grains including: oats, millet, buckwheat, amaranth, and quinoa along with a filling 6 grams of fiber.

It will help with portion control because portion sizes will naturally start to shrink in order to include various other food groups on your plate. Plus, it will help reach the minimum recommendation of aiming to consume at least 5 fruits and vegetables a day. More matter!

Ingredients

  • 4 packages KIND raspberry chia breakfast bars (contains 2 bars per package)
  • 2 (5.3 oz.) containers plain (or vanilla) yogurt (I used Siggi’s)
  • 1 tablespoon chia seeds
  • 1/4 cup raspberries

Instructions

  1. In a small bowl, gently mash raspberries. Stir in chia seeds. Add yogurt and gently fold in raspberries and chia to make a raspberry swirl.
  2. Open up KIND breakfast bars packages. Scoop about 1/3 cup onto one side of the breakfast bar and spread evenly. Top with the other breakfast bar (not too tight, so filling doesn’t spill out!)
  3. Wrap each breakfast “ice cream” sandwich with plastic wrap and add to a sealed tight container. Place in the freezer for at least 2 hours or overnight.
  4. Unwrap and enjoy a treat in the morning!

Making a smoothie bowl instead of an on-the-go drink can help practice mindful eating and encourage slower eating. It’s easy to suck down a smoothie in a few big gulps. By enjoying a smoothie bowl with a spoon it can help you slow down, be more aware of what you’re eating and pay attention to whether or not you are actually hungry.

  • 2 tablespoons hazelnut flour/meal (I used Bob’s Red Mill)
  • 1 tablespoon chia seeds
  • 1 cup milk of choice
  • (optional toppings): banana slices, chia seeds, cocoa nibs

Instructions

  1. Simple add all ingredients into a blender and blend until smooth.
  2. For a thinner consistency, add water. For a thicker consistency, add ice.
  3. Pour into a bowl and add toppings of your choice. Enjoy!
