Dear future children, please do not have a peanut allergy. Your future peanut butter addict’s mom will be very sad. Peanut butter is a staple food in my diet. I can confidently say I enjoy peanut butter pretty much every day.

Just one bowl, these bars are easy to whip up. Pair with a piece of fruit and/or yogurt for breakfast, or enjoy alone as a snack. If you are peanut butter obsessed like me, I even added a smear of peanut butter on top.

I kept this Peanut Butter Oat Bars recipe simple, but of course, you can add your own twist. Stir in chocolate chips, some nuts or seeds. I’m even curious to try tahini in place of the peanut butter.

Peanut Butter Cookie Dough Cups via RDelicious Kitchen @RD_KitchenIs there a certain way you eat certain foods? Anytime I eat a Reese’s peanut butter cup, I gently poke out the middle and eat that first then eat the edges. I like to say that is quirky (my bf thinks I’m weird). Then you have those who just bite a string cheese instead of pulling them into little strings are monsters! There was a recent Buzzfeed article that my bf and I were laughing at of how people eat certain foods. We’ve concluded that they just can’t be trusted. Just kidding, but in all seriousness who actually eats those foods like that?
Peanut Butter Cookie Dough Cups via RDelicious Kitchen @RD_KitchenBack to these Peanut Butter Cookie Dough Cups. They are combining my all of my favorite treats into one: chocolate + peanut butter + cookie dough .. need I say more?

The base of the cookie dough is my favorite chickpea combination. The key is peeling the skins from the chickpeas to create a creamy cookie dough. I know this step might be tedious, but don’t skip it!
Peanut Butter Cookie Dough Cups via RDelicious Kitchen @RD_KitchenI recently invested in a silicone mini muffin pan. The first round I made these, I used a regular muffin tin and used mini muffin liners. Now this way does work, but it is a little messier evenly lining the muffin liners with the chocolate and peeling them off when they are done. The silicone pan makes it so much easier, plus quicker clean up!

The Ultimate PB&J

Calling all PB&J lovers – this recipe is for you! Turn a classic into something new and exciting, like this Ultimate PB&J.
The Ultimate PB&J via RDelicious Kitchen @RD_KitchenI lived off PB&J growing up. It is so quick and easy to make, plus portable. This month The Recipe ReDux challenged members to cook with at least 3 ingredients that are actually in your refrigerator or pantry right now. 99% of the time, my kitchen will never be without peanut butter, bananas, bread, and chia seeds. They are staples.
The Ultimate PB&J via RDelicious Kitchen @RD_Kitchen

I was craving a classic PB&J this weekend, but with this challenge, I wasn’t just going to slather peanut butter and jelly on bread and call it a recipe, so I decided to add a little culinary twist to this classic for this RR challenge.

For a good PB&J (or any sandwich), make sure to start with hearty whole grain bread. Next, comes my favorite part, the peanut butter! I ran out of one of my favorites, Betsy’s Best, so I made my own version by mixing natural peanut butter with cinnamon and chia seeds. Then, topped with bruleed bananas, strawberries, and chopped peanuts, I’d say this is definitely gourmet compared your standard PB&J.

Double Layer Chocolate Peanut Butter Fudge

Chocolate fudge or peanut butter fudge – which one is your favorite? If you can’t decide like me, layer them together to make delicious creamy fudge.
Double Layer Chocolate Peanut Butter Fudge via RDelicious Kitchen @rdkitchenThe Recipe ReDux is challenging members this month to take a trip down memory lane with recreating a fun vacation memory recipe.

A Vacation-Inspired Recipe:
Start unpacking your favorite vacation memories. Think about a trip you took state-side or internationally and create a healthy recipe from an unforgettable meal you enjoyed. Or, create a recipe from a native ingredient you saw or tasted on your travels.

Double Layer Chocolate Peanut Butter Fudge via RDelicious Kitchen @rdkitchenWhen I was younger, my family used to go down to Wildwood, NJ every summer. I was recently reminiscing about our Wildwood vacations with my mom and the one place that we HAD to stop by was Fudge Kitchen. They make the silkiest fudge that just melts in your mouth. Plus, they had so many flavors to choose from, it was so hard to decide which one to get.
Double Layer Chocolate Peanut Butter Fudge via RDelicious Kitchen @rdkitchenWe used to get combo boxes of fudge because everyone in my family wanted different flavors. My two favorite were the classic chocolate and peanut butter fudge. So why not get the best of both flavors and layer them! Now, I know fudge is a treat, but hey when you’re on vacation it’s okay to indulge a little.
Double Layer Chocolate Peanut Butter Fudge via RDelicious Kitchen @rdkitchenTo lighten up this fudge I swapped out the sugar and sweetened it with a little maple syrup and a banana. The only problem with this fudge is you have to be patient. Since there are two layers you have a waiting time in the middle for the chocolate layer to harden before you can add the peanut butter layer.

{Single Serving} Peanut Butter Chocolate Chunk Cookie

When you are craving something sweet, but don’t want to make a whole batch, a Single Serving Peanut Butter Chocolate Chunk Cookie will hit the spot.
{Single Serving} Peanut Butter Chocolate Chunk Cookie via RDelicious Kitchen @rdkitchen
It’s getting a little nutty with Recipe ReDux group this month. Today (October 22nd) is National Nut day and we were challenged to go nuts and make a recipe using nuts in any form – whole nuts, chopped nuts, ground nuts, nut butter and/or nut flour.

Sometimes I just get that craving for a warm, out of the oven, soft gooey chocolate chip cookie? But then I always run into the problem of not wanting to make a whole batch. I have a big sweet tooth and if too many sweets are hanging around, I tend to indulge on some each day. I’ve noticed a big trend on Pinterest of the single-serving type desserts which is genius! The other night when I was having that craving, this new recipe did the trick!
{Single Serving} Peanut Butter Chocolate Chunk Cookie via RDelicious Kitchen @rdkitchen
I know I’ve mentioned plenty of times here, but I LOVE the peanut butter and chocolate combo. The peanut butter helps keep the cookie soft and chewy and going with large chocolate chunks from my hidden stash of a dark chocolate bar = heaven. Wash it down with a glass of milk … craving fixed!

Supermarket RD's Pick: Powdered Peanut Butter

Intrigued by powdered peanut butter? Let’s learn why powdered peanut butter is #RDapproved making this a Supermarket RD’s Pick

Supermarket RD's Pick - Dietitian approved items that you can find in the grocery store!

Crazy Richard's Pure PB (powdered peanut butter) Check out why this item is a Supermarket RD's Pick @RDelicious KitchenDo you love peanut butter as much as I do? Even though regular peanut butter is a good-for-you choice and a healthy fat, those calories can really add up if you are a peanut butter lover like myself.  You can find me adding peanut butter to smoothies, making pb&js, in mixed in oatmeal or yogurt, with apple slices, on bananas, or simply straight of of the jar.

Powdered peanut butter has been one of those supermarket finds that continues to happily feed my peanut butter obsession. It still packs in 6 grams of protein per serving with less fat!

nutrition stats

Powdered peanut butter is made by simply roasting peanuts then are pressed to remove the oil. You get the full delicious peanut taste, with 90% less far and more than 70% fewer calories than regular peanut butter. I really like Crazy Richard’s Pure PB, because it is made with no salt and no sugar added.

Supermarket RD's Pick: Crazy Richard's Pure PB nutrition

You could rehydrate it and make it to a paste, but to be honest it is not creamy and thick like regular peanut butter. I more use powdered peanut butter when it is used IN a recipe like in smoothies, oatmeal, yogurt, and even for baked good recipes. Also, my newest “snack hack” is to slice an apple and sprinkle powdered peanut butter on top. The powdered pb sticks to the moisture of the sliced apple.

So, pretty much I stick to traditional natural peanut butter for my pb&js but stick to powdered peanut butter for mostly everything else!

Have you tried powdered peanut butter before?
