I love overnight oats. This new mocha overnight oats variation has become my new favorite! It is adapted from Lauren Harris-Pincus’ “The Protein-Packed Breakfast Club” cookbook.

I never thought to add coffee to my overnight oats. This is genius! The little extra pick me up, plus the mocha flavor is a perfect way to start the day. The original recipe calls for the addition of coffee and chocolate protein powder, but I only had vanilla protein powder, so I added that plus a little cocoa powder to get that same mocha flavor.

I topped mine with some raspberries and a little chocolate granola.

Ingredients

Scale
  • 1/3 cup rolled oats
  • 1/3 cup strongly brewed coffee, cooled
  • 1/3 cup plain Greek yogurt
  • 1 scoop vanilla protein powder
  • 1 teaspoon cocoa powder
  • 1 teaspoon chia seeds
  • Toppings: raspberries, chocolate raspberry granola

Instructions

  1. In a mason jar or container, add all ingredients; stir well until combined.
  2. Cover an refrigerate overnight.
  3. In the morning, before serving, top with raspberries and chocolate raspberry granola. Enjoy!

Meal prep is key for busy weeks. I still don’t understand when I am counseling clients who tell me they skip breakfast. I need my fuel first thing in the morning to start the day.

I used to never hit the snooze button, but when I make my breakfast in advance I justify the little extra time I have in the morning to get ready.

This recipe is so easy to make!


I decided to use Wild Blueberries because I love how sweet and tart they are. Any fruit would work with this recipe. Wild Blueberries have twice (2x) the antioxidant capacity of larger, cultivated blueberries.

Ingredients

Scale
  • 2 tablespoons rolled oats
  • 1 tablespoon chia seeds
  • 2 tablespoons plain Greek yogurt
  • 1 teaspoon maple syrup
  • 1/4 cup milk
  • 1/2 cup wild blueberries
  • 1/4 cup low sugar granola

Instructions

  1. In a mason jar (or small bowl) combine rolled oats, chia seeds, Greek yogurt, maple syrup, and milk. Stir to combine. Refrigerate overnight.
  2. In the morning top with wild blueberries and granola.

Low sugar granola recommendation: Purely Elizabeth or KIND granola

The base of my overnight oats is typically a plain yogurt or kefir with fruit along with the oats. I often hear that plain yogurt is too tangy and tart. One of my favorite RD tips is to stir in unsweetened applesauce. It adds that sweetness without adding added sugars like flavored yogurts have. Plus, adding a pinch of cinnamon, it adds that perfect sweetness.

Apple Pie Overnight Oats

Ingredients

Scale
  • 2 small apples, peeled and chopped
  • 1 teaspoon lemon juice
  • 1 1/2 tablespoons cinnamon, divided
  • 1/2 cup quick oats
  • 1/2 cup unsweetened applesauce
  • 1/2 cup plain yogurt (I used Siggi’s)
  • 2 tablespoons chia seeds
  • 1/4 cup walnuts, chopped

Instructions

  1. In a small pot combine, chopped apples, lemon juice, and 1 tablespoon cinnamon. Heat over low heat until apples soften. Remove from heat and let cool completely.
  2. In a bowl, combine oats, applesauce, yogurt, chia seeds, and remaining cinnamon. Distribute oat mixture evenly between two mason jars. Add walnuts evenly over the oats, then top with the cooked apples.
  3. Seal with a lid and store in the refrigerator overnight.

  • 1/3 cup unsweetened almond milk
  • 1 small banana, mashed
  • 1 tbsp peanut butter powder
  • 1 tsp chia seeds
  • 1 tsp ground flax seed
  • [optional] Toppings: fresh fruit, unsweetened coconut, unsalted nuts

Instructions

  1. Simple stir all ingredients together.
  2. Cover and refrigerate overnight.
  3. The next morning add toppings and enjoy chilled.
